Smooth contours and seamless construction eliminate food and dirt traps. A perfectly balanced design offsets the weight of the blade. A textured handle provides excellent grip and balance in the hand. A Cromova 18 high-carbon stainless-steel blade is ice tempered and hardened to Rockwell 56°-58° Celcius. This knife is designed and crafted in Japan with a trademarked dimpled grip to ensure a safe and non-slip hold. The edges extend 6.5 mm (0.25" ) up to the blade and are ground to a straight point.
